Crust and Filling

  • 12 sheets Graham crackers Classic base that softens perfectly.
  • 3 medium Ripe bananas Look for yellow with a few brown freckles.
  • 1 box Instant vanilla pudding mix Helps the filling set without cooking.
  • 1.5 cups Cold milk To whisk with the pudding.
  • 8 oz Cream cheese Optional for a tangy, cheesecake-like taste.
  • 8 oz Whipped topping or fresh whipped cream Makes the dessert light and fluffy.
  • 1 tsp Vanilla extract Adds homemade flavor.
  • 1 pinch Salt Enhances all flavors.

Preparation

  • Whisk the pudding mix with cold milk in a bowl until thick.
  • In another bowl, beat the cream cheese with a splash of vanilla and a pinch of salt until smooth.
  • Fold in the whipped topping into the cream cheese mixture until well combined.
  • Stir in some of the pudding mixture or keep them swirled for a marbled effect.

Layering

  • In a 9 x 13 dish, layer graham crackers, followed by a layer of the creamy filling and banana slices.
  • Repeat the layers until all ingredients are used, finishing with a layer of cream on top.
  • Top with crushed graham crackers for added crunch.

Chilling

  • Cover the dish with plastic wrap and chill for at least 6 hours, preferably overnight.
  • Serve chilled and enjoy the layered texture.

Notes

This cake gets better after chilling. Store it covered in the fridge and consume within 2 to 3 days for best quality. If storing banana slices on top, brush with lemon juice to prevent browning.
