Ingredients
  

Main Ingredients

  • 2 cups RITZ crackers Use classic, not flavored ones.
  • 1 cup marshmallow creme or fluff Easier than melting marshmallows.
  • 1 cup chocolate (milk chocolate chips or semi sweet) Chopped chocolate bars also work.
  • 2 tablespoons butter Helps chocolate melt smoothly.

Optional Toppings

  • a pinch sea salt For added flavor.
  • to taste sprinkles Fun topping for aesthetics.
  • to taste crushed graham crackers For topping if desired.

Instructions
 

Preparation

  • Line a baking sheet with parchment paper and arrange half of the RITZ crackers flat side up.
  • Spoon a little marshmallow creme onto each cracker (about 1 to 2 teaspoons). Top with another cracker to create sandwiches, pressing lightly without oozing the filling out.

Chocolate Coating

  • In a microwave-safe bowl, combine chocolate and butter. Microwave in short bursts, stirring until smooth.
  • Dip each sandwich halfway into the melted chocolate or drizzle chocolate over the tops. Place back on the parchment.

Setting

  • Allow the cookies to sit at room temperature until the chocolate firms up, or refrigerate for about 15 to 20 minutes.

Notes

Marshmallow creme is sticky; a small spoon works best for application. Store in an airtight container; they last about 2 days at room temperature and up to a week in the fridge. Chill for cleaner bites if desired.
