Main Ingredients
  • 1 lb ground chicken or diced chicken breasts
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp coconut aminos substitute for soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp apple cider vinegar
  • 1 cup carrots, grated or chopped for extra crunch
  • 8 leaves bibb lettuce or romaine for wrapping
Cheaters Hoisin Sauce (optional)
  • 2 tbsp almond butter
  • 1 tbsp honey omit if on Whole30
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • to taste chili paste for spiciness

Method
 

Cooking
  1. Heat a splash of oil in a large skillet over medium heat.
  2. Add the ground chicken and break it up in the pan.
  3. Once the chicken is almost cooked through, add the garlic, onion, and ginger.
  4. Cook until fragrant, about 2-3 minutes.
  5. Pour in the coconut aminos, sesame oil, and apple cider vinegar.
  6. Add the grated or chopped carrots and stir until everything is mixed well.
  7. Let the filling cool slightly before serving.
  8. Stuff the filling into lettuce leaves and serve immediately.

Notes

For a crunchier texture, chill the lettuce leaves in the fridge before using. Other lettuce options include cabbage leaves or collards for a different flavor. Serve with a simple dipping sauce if desired.
