  • 1 lb ground chicken or diced chicken breasts
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp coconut aminos substitute for soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp apple cider vinegar
  • 1 cup carrots, grated or chopped for extra crunch
  • 8 leaves bibb lettuce or romaine for wrapping

Cheaters Hoisin Sauce (optional)

  • 2 tbsp almond butter
  • 1 tbsp honey omit if on Whole30
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • to taste chili paste for spiciness

Instructions
 

Cooking

  • Heat a splash of oil in a large skillet over medium heat.
  • Add the ground chicken and break it up in the pan.
  • Once the chicken is almost cooked through, add the garlic, onion, and ginger.
  • Cook until fragrant, about 2-3 minutes.
  • Pour in the coconut aminos, sesame oil, and apple cider vinegar.
  • Add the grated or chopped carrots and stir until everything is mixed well.
  • Let the filling cool slightly before serving.
  • Stuff the filling into lettuce leaves and serve immediately.

Notes

For a crunchier texture, chill the lettuce leaves in the fridge before using. Other lettuce options include cabbage leaves or collards for a different flavor. Serve with a simple dipping sauce if desired.
