- Once the chicken is almost cooked through, add the garlic, onion, and ginger.
- Cook until fragrant, about 2-3 minutes.
- Pour in the coconut aminos, sesame oil, and apple cider vinegar.
- Add the grated or chopped carrots and stir until everything is mixed well.
- Let the filling cool slightly before serving.
- Stuff the filling into lettuce leaves and serve immediately.
Notes
For a crunchier texture, chill the lettuce leaves in the fridge before using. Other lettuce options include cabbage leaves or collards for a different flavor. Serve with a simple dipping sauce if desired.
