  • 4 cups Frozen pineapple chunks The main flavor and thickener.
  • 1/2 cup Pineapple juice Or the juice from canned pineapple.
  • 1 teaspoon Vanilla extract Just a little to mimic soft serve.
  • 1/2 cup Coconut milk or oat milk Optional creamy add-in for dairy free version.
  • 1 teaspoon Lemon juice Optional for brightness.

Preparation

  • Add frozen pineapple to a blender.
  • Pour in the pineapple juice and add vanilla.
  • Blend, stopping to scrape the sides as needed.
  • Add more liquid only if the blender is stuck.
  • Serve right away for a soft-serve vibe, or freeze for 20 to 30 minutes for a firmer scoop.

Notes

For the best texture, use fully frozen pineapple and serve in chilled cups. Adjust the amount of liquid to your desired thickness.
