  • 6 cups Rice Krispies cereal
  • 10 oz Mini marshmallows + extra for filling
  • 1/2 cup Butter
  • 1 cup Graham crackers, crushed into fine crumbs
  • 1 cup Chocolate bars, chips, or spread
  • 1 teaspoon Vanilla extract (optional)
  • 1 pinch Salt (optional)
  • 1 tablespoon Nonstick spray or extra butter for hands
  • 1 sheet Parchment paper

Preparation

  • Line a rimmed baking sheet with parchment paper and spray it lightly.
  • In a large pot, melt butter over low heat. Add mini marshmallows and stir until smooth.
  • Stir in a splash of vanilla and a pinch of salt if using, then add the Rice Krispies and fold gently.
  • Dump the mixture onto the parchment and press it into a rectangle, about a half inch thick.
  • Let it cool for just a few minutes until it holds its shape.
  • Sprinkle crushed graham crackers on top and lightly press them in.
  • Add chocolate chips or spread, and mini marshmallows on top.
  • Use the parchment to roll it up tightly from the short end.
  • Chill the roll in the fridge for 15 to 25 minutes, then slice into pinwheels.

Notes

Store in an airtight container for up to 3 days at room temperature or for 1 week in the fridge. You can freeze the pinwheels for up to 6 weeks.
