  • 1 can Rotel (diced tomatoes with green chilies), well drained Ensure well-drained to prevent watery dip.
  • 1 cup sour cream Provides a creamy base.
  • 1 packet ranch seasoning Adjust according to taste.
  • 1 cup shredded cheddar cheese Freshly shredded is recommended.

Optional add-ins

  • 2 tablespoons chopped green onions Adds freshness.
  • 1 tablespoon diced jalapenos Adjust to taste for heat.
  • 2 tablespoons chopped cilantro For an extra layer of flavor.

Preparation

  • Drain the Rotel well.
  • In a medium bowl, stir together sour cream and ranch seasoning until smooth.
  • Fold in the drained Rotel and shredded cheddar cheese.
  • Taste it and adjust seasoning with more ranch if desired.
  • Cover and chill for at least 30 minutes before serving.

Notes

For best flavor, let it chill for at least 30 minutes. Serve with tortilla chips, pretzel thins, or crunchy veggies.
