Ingredients
  

Main Ingredients

  • 1 pound ground beef
  • 10-12 ounces egg noodles Cooking slightly underdone is recommended.
  • 1 small onion, diced
  • 2-3 cloves garlic, minced
  • 1 can cream of mushroom soup Or cream of chicken.
  • 1 cup sour cream or plain Greek yogurt
  • 1-1.5 cups shredded cheese (cheddar or mozzarella)
  • 1 cup beef broth
  • 1 tablespoon tomato paste Optional but adds depth.
  • Salt and pepper To taste.

Optional Add-ins

  • mushrooms Sautéed for extra flavor.
  • peas
  • chopped spinach
  • paprika

Instructions
 

Preparation

  • Boil the noodles in salted water until just barely done. Drain and set aside.
  • In a big skillet, cook the ground beef with diced onion. Break it up as it cooks. When it is no longer pink, add the garlic and cook for about 30 seconds. Drain extra grease if necessary.

Assembly and Baking

  • Reduce heat to low and stir in the cream of mushroom soup, sour cream, beef broth, and tomato paste if using. Season with salt and pepper. Adjust seasoning to taste.
  • Add the cooked noodles to the sauce and stir to combine. If the mixture looks too thick, add a splash more broth.
  • Transfer the mixture to a greased baking dish. Top with shredded cheese.
  • Bake at 350°F for about 20 to 25 minutes, or until bubbling and cheese is melted.
  • Let it sit for 5 to 10 minutes before serving to help it set up.

Notes

This dish reheats well and tastes even better the next day. Feel free to adjust ingredients to suit your family's tastes.
