  • 4 pieces salmon fillets, about 5 to 6 ounces each
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced (or 1 teaspoon garlic powder) Use garlic powder for a quicker preparation.
  • 1 whole lemon (zest and juice)
  • to taste salt and black pepper

Optional Ingredients

  • to taste red pepper flakes For added spice.
  • to taste Dijon mustard For a tangy flavor.
  • to taste Parmesan cheese Use during the last couple minutes of baking.
  • to taste fresh dill For garnishing.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a sheet pan with parchment paper or foil.
  • Toss asparagus with olive oil, salt, and pepper, then spread it out on the sheet pan.
  • Place salmon on the pan and rub with minced garlic, lemon zest, a little lemon juice, salt, and pepper.

Cooking

  • Bake for 10 to 14 minutes depending on the thickness of the salmon, until it flakes easily.
  • Finish with extra lemon juice and any optional toppings you like.
  • Optional: Broil for 1 minute at the end for added color, keeping a close eye.

Notes

To keep salmon juicy, avoid overcooking it. It continues to cook after being pulled from the oven. Spread asparagus out to prevent it from getting soggy. Feel free to swap asparagus for other vegetables like green beans or zucchini.
