Ingredients
  

Main Ingredients

  • 2-3 pounds boneless skinless chicken breasts or thighs Breasts are leaner, thighs are richer.
  • 1.5 cups BBQ sauce Use your favorite brand.
  • 1 small onion, thinly sliced or finely chopped
  • 2-3 cloves garlic, minced
  • 1 tablespoon brown sugar (optional) Only if your sauce is not sweet.
  • 1 tablespoon apple cider vinegar Helps balance the sweetness.
  • 1 teaspoon smoked paprika (optional) Adds additional flavor.
  • to taste salt and pepper
  • as needed cooking spray or a little oil for the slow cooker insert For easier cleanup.

Optional Heat

  • a pinch chili flakes or hot sauce For added heat.

Instructions
 

Preparation

  • Spray the inside of the slow cooker for easier cleanup.
  • Add the onion and garlic to the bottom of the cooker.
  • Lay the chicken on top and sprinkle with salt, pepper, and smoked paprika if using.

Mix and Cook

  • In a bowl, stir together the BBQ sauce, apple cider vinegar, and brown sugar if needed.
  • Pour the sauce over the chicken, ensuring it covers the chicken well.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.

Finishing Touch

  • Once cooked, shred the chicken with a fork.
  • Return the shredded chicken to the slow cooker to soak in the sauce for 10-15 minutes before serving.

Notes

For a thicker sauce, cook uncovered for 15-20 minutes after shredding or simmer some sauce separately before stirring back in. This chicken holds up well in the fridge and remains juicy when stored with the sauce. Great for meal prep or parties.
