Main Ingredients

  • 2 pounds carrots, peeled and cut into 1-inch chunks or use baby carrots
  • 3 tablespoons unsalted butter, cut into pieces
  • 1/3 cup pure maple syrup
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt, plus more to taste
  • Black pepper to taste
  • Optional: pinch of nutmeg or cayenne for a little warmth

Instructions
 

Preparation

  • If using whole carrots, peel and slice into even chunks so they cook at the same speed.
  • Add carrots to the slow cooker. Top with butter, maple syrup, brown sugar, vanilla, cinnamon, salt, and pepper.

Cooking

  • Cover and cook on Low for 4 to 5 hours or on High for 2 to 2.5 hours, until fork-tender.
  • Stir gently so every piece gets coated. Taste and adjust salt or sweetness.

Serving

  • Spoon into a warm bowl and add a tiny sprinkle of cinnamon or flaky sea salt on top.

Notes

These carrots pair fantastically with roast chicken, salmon, meatloaf, or holiday ham. For a thicker glaze, use a slurry method with cornstarch, or reduce the glaze by cooking uncovered on High.
