  • 4 pieces boneless skinless chicken breasts Thighs can also be used for juicier results.
  • 1 cup chicken broth
  • 1 cup heavy cream or a mix of heavy cream and cream cheese.
  • 1/2 cup parmesan cheese Grated.
  • 4 cloves garlic Minced.
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon chili flakes Optional for a bit of heat.

Additional Flavoring

  • 1/2 cup sun dried tomatoes Packed in oil for deeper flavor.
  • Salt to taste
  • Pepper to taste

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper.
  • Optional: Sear the chicken in a hot skillet with a little oil until golden brown on the outside.

Sauce Preparation

  • In the slow cooker, whisk together chicken broth, heavy cream (or cream mix), parmesan, garlic, Italian seasoning, and chili flakes.
  • Stir in chopped sun dried tomatoes.

Cooking

  • Add the chicken to the sauce and spoon some sauce on top.
  • Cook on LOW for 3 to 5 hours, until the chicken is tender and cooked through (165°F).
  • Once done, stir the sauce well. For a thicker sauce, leave the lid off for a few minutes or add more parmesan.

Final Touches

  • Taste the sauce and adjust seasoning as needed, adding more salt, chili flakes, or a squeeze of lemon.

Notes

This dish can be paired with pasta, rice, mashed potatoes, or crusty bread to soak up the sauce. It stores well in an airtight container for 3 to 4 days in the refrigerator and is best enjoyed fresh.
