  • 3/4 cup brown sugar, packed Provides moisture and sweetness.

  • 2 teaspoons vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the plant-based butter and both sugars until fluffy.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. Gradually add in the dry ingredients: flour, baking soda, and salt. Mix until just combined.
  5. Fold in the dairy-free chocolate chips.
Chilling
  1. Chill the dough for about 30 minutes to enhance chewiness.
Baking
  1. Scoop spoonfuls of dough onto a baking sheet.
  2. Bake in the preheated oven for about 10 minutes, until slightly soft.
  3. Let the cookies cool on the tray for a few minutes before transferring to a cooling rack.

Notes

Store cookies in an airtight container for up to 4 days. For longer freshness, freeze the dough and bake from frozen, adding a couple of extra minutes to the baking time.
