Ingredients
  

Main ingredients
  • 1 lb ground turkey Light or dark meat
  • 1 cup quinoa Any color works
  • 1 can canned tomatoes Diced or crushed
  • 1 cup corn Canned or frozen
  • 1 can black beans Rinsed and drained
  • 4 cups chicken broth Homemade or store-bought
  • 1 tbsp olive oil For cooking
  • 2 tsp comin powder For seasoning
  • 1 tsp chipotle powder For a smoky flavor
  • 3 cloves garlic Minced
  • 1 medium onion Chopped
  • 1 bell pepper bell pepper Chopped (jalapeƱo for spice)
  • 1 lime lime Juiced before serving
  • 1/4 cup cilantro Fresh, for garnish

Method
 

Cooking the Soup
  1. Heat olive oil in a large pan over medium heat.
  2. Add ground turkey to the pan and brown slightly.
  3. Chop the onion and bell pepper, and add to the pan with the turkey.
  4. Add minced garlic and cook until fragrant, careful not to burn.
  5. Sprinkle cumin and chipotle powder over the mixture.
  6. Add canned tomatoes, corn, black beans, quinoa, and chicken broth.
  7. Bring to a simmer, scraping any browned bits from the bottom.
  8. Let it simmer for about 20 minutes, stirring occasionally.
  9. Before serving, squeeze lime juice and garnish with cilantro.

Notes

This soup can be adapted with whatever ingredients you have. Substitute turkey with chicken or make it vegetarian with additional beans. It stores well and tastes even better the next day.
