Ingredients
  

Main Ingredients
  • 8 large eggs Beaten well
  • 1 cup milk Dairy or non-dairy milk can be used
  • 1 cup shredded cheese Cheddar or pepper jack recommended
  • 1 cup cooked sausage Or substitute with rotisserie chicken or bacon
  • 1 cup diced jalapeños Adjust amount for desired spice level
  • 1 medium onion Diced
  • 1 cup diced bell pepper Or substitute with other vegetables
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, beat the eggs and mix in the milk, salt, and pepper.
  3. Sauté onions and bell peppers in a skillet until softened, then mix in the cooked sausage.
  4. Add the sautéed mixture and jalapeños into the egg mixture along with half of the shredded cheese. Stir well to combine.
  5. Pour the mixture into the prepared baking dish and top with the remaining cheese.
Baking
  1. Bake in preheated oven for 30-35 minutes, or until set and lightly golden.

Notes

Leftovers can be stored in the fridge for up to 4 days. For longer storage, wrap pieces individually and freeze for up to 2 months. Reheat in the microwave or toaster oven.
