For the Spicy Red Shawarma Sauce

  • 2 tablespoons tomato paste
  • 1 to 2 tablespoons harissa Start small if you are heat sensitive.
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 small clove garlic, finely grated
  • 1 teaspoon paprika Use smoked paprika if you have it.
  • to taste salt
  • 1 to 3 tablespoons water To thin the sauce out.

Preparation

  • Stir together the tomato paste and harissa.
  • Add lemon juice, olive oil, and grated garlic into the mixture.
  • Sprinkle in paprika and salt.
  • Add water a little at a time until the sauce is pourable but still clingy.
  • Taste the sauce and adjust with more lemon or harissa if desired.
  • Let the sauce sit for at least 10 minutes before serving to let flavors meld together.

Notes

Serve with wrapped sliced chicken or on a rice bowl. Consider making it thicker for wraps and thinner for drizzling on bowls.
