Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Sifted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup dairy-free butter Softened (like Earth Balance)
  • 1 cup granulated sugar
  • 1 cup powdered sugar Helps with texture
  • 1 tablespoon vanilla extract Essential flavor
  • 1 3/4 cup plant milk Almond or oat milk recommended
  • 1 cup unsweetened applesauce Acts as egg replacer
Mix-ins
  • 1 cup vegan sprinkles Double check they are vegan

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In one bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the dairy-free butter with granulated and powdered sugars until fluffy.
  4. Add the vanilla, plant milk, and applesauce and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the vegan sprinkles.
Baking
  1. Scoop dough balls onto the prepared baking tray.
  2. Bake for 9-11 minutes. They should look slightly underdone.
  3. Allow to cool completely on the pan before transferring to an airtight container.

Notes

Chill the dough for 30 minutes for better texture. Avoid overbaking for softer cookies. Use parchment between stacks when storing to prevent sticking.
