  • 1 cup cooked sweet potato Mashed leftovers or air fryer baked sweet potato.
  • 2 large eggs Free-range if possible.
  • 1/2 cup almond flour Do not use coconut flour.
  • 1 tablespoon arrowroot or tapioca flour Optional, but helps with texture.
  • 1 tablespoon coconut oil Melt before adding.
  • 1/2 teaspoon cinnamon Adjust to taste.
  • 1/2 teaspoon baking powder Ensure it's paleo or skip.
  • 1 pinch salt

Preparation

  • Preheat your waffle iron for five minutes.
  • In a bowl, mash the cooked sweet potato until smooth.
  • Add eggs, almond flour, arrowroot/tapioca flour, melted coconut oil, cinnamon, baking powder, and salt. Mix until well combined.
  • If desired, blend the mixture for a smoother batter.

Cooking

  • Grease the waffle iron lightly with coconut oil.
  • Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions.
  • Avoid opening the waffle iron too early to prevent splitting.

Serving

  • Serve warm, topped with fresh berries, almond butter, or coconut yogurt if desired.

Notes

These waffles freeze well and can be reheated in a toaster. Consider adding a scoop of paleo protein powder for extra nutrition. For variety, try using pumpkin instead of sweet potato or do mini pancakes without needing a waffle maker.
