  • 28-32 ounces Frozen tater tots, certified gluten free
  • 8 large Eggs
  • 1 cup Milk or half and half For rich, custardy eggs
  • 1 pound Breakfast sausage or bacon, fully cooked and crumbled
  • 2 cups Shredded cheese Cheddar or a blend
  • 1 small Bell pepper, diced
  • 1 small Onion, diced
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika Optional but tasty
  • Salt and black pepper To taste
  • Green onions or chives For garnish

Preparation

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • Cook and crumble the sausage if it isn’t already done.
  • Whisk the eggs, milk, garlic powder, paprika, salt, and pepper in a large bowl until smooth.

Assembly

  • Scatter the cooked sausage evenly in the baking dish.
  • Add the diced onion and pepper.
  • Sprinkle half the cheese over the top.
  • Pour the egg mixture over everything, making sure it spreads to the corners.
  • Arrange tater tots in tidy rows on top, keeping them in a single layer for maximum crunch.
  • Add the remaining cheese sparingly on top if desired.

Baking

  • Bake for 40 to 45 minutes, until the eggs are set in the center and the tater tots are crispy and browned.
  • If you want extra crunch, flip the oven to broil for 2 to 3 minutes at the end.
  • Let it rest for 10 minutes before slicing.

Garnishing

  • Top with green onions or chives and serve warm.

Notes

This casserole is make-ahead friendly, freezer friendly, and versatile. Freezer option: Assemble and freeze for up to 2 months. Bake from frozen at 350°F for about 60 to 75 minutes.
