  • 1 bag frozen tater tots A crunchy golden top layer.
  • 8 large eggs The main binding ingredient.
  • 1 cup milk or half and half Makes the eggs softer and less dry.
  • 2 cups shredded cheese (cheddar or pepper jack) Cheddar is classic, but pepper jack adds heat.
  • 1 lb breakfast sausage or bacon Adds savory flavor.
  • 1 medium onion Optional, adds flavor.
  • 1 medium bell pepper Optional, adds color.
  • 1 tsp salt For seasoning.
  • 1 tsp pepper For seasoning.
  • 1 tsp garlic powder For flavor.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.
  • Brown your sausage (or cook your bacon) in a skillet. If using onion or peppers, toss them in for a few minutes until softened. Drain extra grease if necessary.
  • Spread the cooked meat and veggies in the baking dish. Sprinkle on about two-thirds of your cheese.
  • In a bowl, whisk the eggs with the milk, salt, pepper, and garlic powder. Pour this mixture evenly over the ingredients in the baking dish.
  • Arrange frozen tater tots on top in a single layer.
  • Bake for about 40-50 minutes, until the center is set and the tots are golden. Sprinkle the remaining cheese on top for the last 5-10 minutes.
  • Let it sit for 10 minutes before slicing to help the squares hold together.

Notes

This casserole can be prepared ahead of time and refrigerated before baking. To maintain crispiness, add the tater tots just before baking.
