Tater Tot Casserole with Ground Beef

Ingredients
  

Main Ingredients

  • 1.5 pounds Ground beef About 1 to 1.5 pounds
  • 1 small Onion, diced Or 1 to 2 teaspoons onion powder if you’re in a hurry
  • 2-3 cloves Garlic, minced Optional but highly recommended
  • 1 teaspoon Paprika Or smoked paprika if you like a little extra
  • 1 can Cream of mushroom soup Or cream of chicken
  • 1/2 cup Sour cream Plain Greek yogurt works too
  • 1-2 cups Frozen mixed veggies Peas and carrots are classic
  • 1.5-2 cups Shredded cheddar cheese To taste
  • 1 bag Frozen tater tots
  • splash optional Milk To loosen the sauce if it’s thick

Instructions
 

Preparation

  • Preheat your oven to 375 F. Grab a 9x13 baking dish and lightly grease it.
  • Brown the ground beef in a big skillet over medium heat. Add the diced onion and cook until it softens. If there’s a lot of grease, drain most of it.
  • Add garlic, salt, pepper, and paprika. Stir for about 30 seconds.
  • Turn the heat down and stir in the cream soup and sour cream. Add the frozen veggies. If the mixture looks too thick, add a splash of milk.
  • Stir in about half of the cheese.
  • Spread the filling into your baking dish. Top with the remaining cheese and layer the frozen tater tots on top.
  • Bake for about 35 to 45 minutes, or until the tots are crisp and the edges are bubbling.
  • Let it sit for 5 to 10 minutes before scooping.

Notes

This casserole can be made ahead of time and tastes even better as leftovers. Store in an airtight container for up to 3-4 days. Serve with a light salad or steamed vegetables.
