Ingredients
  

For the Spaghetti Squash
  • 1 medium spaghetti squash Choose one that is firm and heavy for its size.
For the Filling
  • 1 pound ground turkey Can be substituted with shredded rotisserie chicken or tofu.
  • 2 tablespoons taco seasoning Use store-bought or homemade.
  • 1 cup cheese Use shredded cheese of your choice.
Optional Toppings & Variations
  • black beans, corn, pickled jalapeños, cilantro, salsa, avocado, sour cream, green onions Feel free to mix and match according to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 30-35 minutes, or until fork-tender.
Cooking the Filling
  1. While the squash bakes, brown the ground turkey in a skillet over medium heat.
  2. Stir in taco seasoning and cook for another 5 minutes until well combined.
Assembling the Boats
  1. Once the squash is cooked, use a fork to scrape the inside until it forms spaghetti-like strands.
  2. Mix in the cooked turkey mixture and fill back into the squash halves.
  3. Sprinkle cheese on top and place back in the oven for an additional 5-10 minutes to melt the cheese.
