Ingredients for the Peach Puree

  • 2 pieces ripe peaches Alternatively, about 1 and 1/2 cups sliced peaches
  • 1-2 teaspoons lemon juice Fresh is best
  • 1-2 teaspoons honey, maple syrup, or simple syrup Optional, based on sweetness preference

For Serving

  • Chilled sparkling water or club soda Or use non-alcoholic sparkling wine
  • Ice Optional, more for casual glasses than flutes

Preparation

  • Wash your peaches; peel if you want a super smooth puree.
  • Slice the peaches and remove the pit.
  • Add peaches to a blender with lemon juice and blend until smooth.
  • Taste the puree; add honey or maple syrup if needed and blend again.
  • Chill the puree for 10 to 15 minutes if time allows.

Serving

  • Add 2 to 4 tablespoons of peach puree to each glass.
  • Slowly top with sparkling water or club soda.
  • Stir gently to keep the bubbles.

Notes

Use very ripe peaches for best flavor. Chill all ingredients for a better drink. Consider making a peach bar for gatherings.
