Ingredients
  

For the salad

  • 4 cups Seedless watermelon, cut into cubes or small triangles
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Fresh mint, chopped or torn
  • 1 medium Cucumber (optional)
  • 1 small Red onion (optional)
  • 1 cup Arugula (optional)
  • 1 small Jalapeno (optional)
  • 1/4 cup Pistachios (optional)

For the dressing

  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Fresh lime juice (or lemon juice)
  • 1-2 teaspoons Honey or maple syrup (optional)
  • pinch Salt and black pepper
  • splash Balsamic or vinegar (optional)

Preparation

  • Cut the watermelon and place it in a big bowl. If it is very juicy, let it sit in a colander for 5 minutes to drain.
  • Add half of the feta and the mint to the bowl, reserving the rest of the feta for topping.
  • Drizzle the dressing over the salad gently. It's better to add less initially since you can always add more later.
  • Toss the salad gently to combine. Use a folding motion to avoid breaking down the watermelon.
  • Taste the salad and adjust seasonings if necessary by adding more lime, mint or a crack of pepper.

Notes

Best served immediately and enjoyed cold. You can prep the ingredients ahead but do not toss until ready to serve. This salad is versatile; feel free to customize it with different add-ins or herbs.
