Dressing
- 1 juiced lime Adjust based on sweetness of watermelon.
- 2 tablespoons olive oil Use a good quality oil.

Instructions
Preparation
- Chop watermelon into cubes, slice cucumber thin, and crumble feta cheese.
- Tear mint leaves and optionally slice red onion.
Mixing
- In a large bowl, combine all ingredients.
- Drizzle with olive oil, squeeze lime juice over the salad, and add pepper and salt to taste.
- Gently toss the salad, making sure not to smush the watermelon.
