  • 4 cups chopped watermelon Use the juiciest watermelon available.
  • 1 large cucumber Slice thinly for better texture.
  • 1 cup crumbled feta cheese Preferably from a block for creaminess.
  • 1/4 cup fresh mint leaves Tear before adding for more flavor.
  • 1/4 small red onion Optional; adds a punch.
Dressing
  • 1 juiced lime Adjust based on sweetness of watermelon.
  • 2 tablespoons olive oil Use a good quality oil.
  • to taste freshly ground black pepper
  • to taste flaky sea salt Enhances flavor.

Method
 

Preparation
  1. Chop watermelon into cubes, slice cucumber thin, and crumble feta cheese.
  2. Tear mint leaves and optionally slice red onion.
Mixing
  1. In a large bowl, combine all ingredients.
  2. Drizzle with olive oil, squeeze lime juice over the salad, and add pepper and salt to taste.
  3. Gently toss the salad, making sure not to smush the watermelon.
  4. Taste and adjust lime or salt if needed.

Notes

Serve immediately for the best taste and texture. For variations, consider adding arugula, cherry tomatoes, or nuts for extra flavor and crunch.
