  • 1 lb ground turkey Use very lean turkey for best results.
  • 2 medium sweet potatoes Cut into small, even cubes.
  • 1 medium onion Chopped.
  • 1 cup bell pepper Chopped.
  • 2 tbsp olive oil For cooking.

Seasonings

  • 1 tsp salt To taste.
  • 1 tsp black pepper To taste.
  • 1 tsp cumin For flavor.
  • 1 tsp smoked paprika Optional, for added flavor.
  • 1 pinch red pepper flakes Optional, for spice.

Instructions
 

Preparation

  • Peel and cube the sweet potatoes, then store them in water if pre-prepping.
  • Chop the onion and bell pepper.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add sweet potatoes and a splash of water, cover, and cook for about 5-7 minutes until tender.
  • Remove the lid, allow to brown, and then add onion and bell pepper.
  • Cook until softened, then push vegetables to the side and add ground turkey.
  • Season with salt, pepper, cumin, and smoked paprika; cook until turkey is no longer pink.
  • Mix everything together, adjust seasoning if necessary, and serve.

Notes

Cut sweet potatoes small for even cooking. Season in layers for best flavor.
