  • 1.5 to 2 pounds chicken thighs or breasts, patted dry Use boneless, skinless for juiciness.
  • 1 tablespoon olive oil or ghee For searing the chicken.
  • 3 cloves garlic, minced Enhances flavor.
  • 1 teaspoon Italian seasoning For seasoning.
  • 1 tablespoon tomato paste Adds richness to the sauce.
  • 1/3 cup sun-dried tomatoes in oil, drained and sliced Adds sweetness and tang.
  • 2/3 cup chicken broth Use low sodium if desired.
  • 1/2 cup coconut cream Scoop from a chilled can of coconut milk.
  • 1 to 2 teaspoons nutritional yeast, optional For a cheesy flavor.
  • 1 teaspoon red wine vinegar or apple cider vinegar Adds brightness to the sauce.
  • Fresh basil to taste chopped, for garnish Adds fresh aroma and flavor.

Instructions
 

Preparation

  • Season the chicken with salt and pepper on both sides.
  • Heat the oil in a large skillet over medium-high heat. Sear the chicken for 4 to 6 minutes per side until browned and cooked through. Remove to a plate and keep warm.

Cooking

  • Lower the heat to medium. Add garlic and sauté for about 30 seconds until fragrant. Stir in Italian seasoning and tomato paste, cooking for another 30 seconds.
  • Add the sun-dried tomatoes and chicken broth, scraping any browned bits from the bottom. Let it bubble for a minute.
  • Stir in coconut cream and nutritional yeast. Simmer uncovered for 3 to 5 minutes until slightly thickened.
  • Return the chicken to the pan and spoon the sauce over the top. Simmer for 1 to 2 minutes to marry everything together. Add vinegar, taste, and adjust salt and pepper.

Serving

  • Finish with fresh basil and serve immediately with your favorite sides.

Notes

Store leftovers in a sealed container for up to 4 days. Reheat gently to avoid splitting. Pair with mashed cauliflower, roasted potatoes, or sautéed greens.
