Ingredients
  

For the Zucchini Fries

  • 2 medium zucchinis
  • 1 cup breadcrumbs (panko preferred) Panko gives the most crunch.
  • 1/2 cup grated Parmesan Optional but highly recommended.
  • 2 large eggs Beaten.
  • 1/2 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt Plus more to taste.
  • 1/4 teaspoon black pepper
  • Cooking spray or a little oil in a mister For misting the tops before air frying.

Preparation

  • Wash the zucchini and cut off the ends. Slice it into fry shapes about the size of regular fries.
  • Lay the zucchini sticks on paper towels and pat them dry to remove excess moisture.
  • Set up a breading station with three bowls: flour mixed with a pinch of salt and pepper, beaten eggs, and a mix of breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
  • Dip each zucchini stick in flour first, then into the egg, and finally into the breadcrumb mixture, pressing lightly so the crumbs stick.

Cooking

  • Preheat your air fryer to 400°F for about 3 minutes if required.
  • Arrange the coated zucchini fries in a single layer in the air fryer basket. Lightly spray the tops with cooking spray.
  • Air fry at 400°F for 10 to 14 minutes, flipping halfway through. They are done when golden and crisp.

Notes

For best results, dry the zucchini well; do not skip the flour step as it helps the egg and crumbs stick; keep the fries in a single layer; serve immediately for optimal crispness.
