Ingredients
  

Oat Base

  • 2 cups Old fashioned oats For the best chewy texture.
  • 1 cup All purpose flour Can substitute with a 1 to 1 gluten free blend.
  • 1/2 cup Brown sugar Adds caramel flavor.
  • 1 teaspoon Baking powder For lift.
  • 1/4 teaspoon Salt Enhances blueberry flavor.
  • 1/2 cup Butter Melted to bind ingredients.
  • 1 teaspoon Vanilla extract For aroma.

Blueberry Layer

  • 2 cups Blueberries Fresh or frozen; do not thaw.
  • 1 tablespoon Cornstarch Thickens the blueberry filling.
  • 1 tablespoon Lemon zest or lemon juice Optional, brightens flavor.

Optional Add-ins

  • 1/2 teaspoon Cinnamon Adds warmth.
  • 1/2 cup Sliced almonds or chopped walnuts For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  • In a large bowl, combine oats, flour, brown sugar, baking powder, and salt.
  • Pour in the melted butter and vanilla, then mix until the mixture resembles damp, sandy crumbs.
  • Firmly press about two-thirds of the oat mixture into the lined pan.

Cooking the Blueberry Layer

  • In a small saucepan, combine blueberries, cornstarch, and lemon garnish over medium heat until glossy and slightly thickened.
  • Spoon the blueberry mixture over the pressed oat base in the pan.
  • Sprinkle the remaining oat mixture over the blueberry layer.

Baking

  • Bake in the preheated oven for about 30 to 40 minutes, or until the top is golden.
  • Allow to cool completely before slicing for clean edges.

Notes

These bars can be stored in an airtight container for up to 2 days at room temperature or 5 to 6 days in the fridge. They freeze well for up to 3 months.
