Ingredients
  

Cookie Base

  • 1 cup Butter (softened, not melted)
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar For that slight caramel warmth
  • 1 large Egg
  • 2 teaspoons Vanilla extract
  • 3 cups All purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt

Topping

  • 1 cup Caramel sauce or caramel bits Thick caramel works best
  • 2 tablespoons Heavy cream Optional, to loosen caramel if needed
  • 1 cup Milk chocolate chips or a chopped milk chocolate bar
  • 1/2 cup Shortbread cookie pieces or crushed butter cookies Optional, adds a Twix-like texture

Instructions
 

Preparation

  • Heat the oven to 350°F and line two baking sheets with parchment paper.
  • Cream the butter and sugars in a bowl until fluffy and lighter in color.
  • Mix in the egg and vanilla until smooth.
  • Add flour, baking powder, and salt. Mix just until the dough comes together. Do not overmix.
  • Scoop into large balls, then gently flatten into thick discs on the baking sheet.
  • Bake for about 9 to 11 minutes until they look set but still soft in the center.
  • Let them cool on the pan for 10 minutes, then move to a cooling rack.

Topping

  • Once cookies are fully cooled, spread a layer of caramel on top.
  • Melt the milk chocolate and spoon it over the caramel.
  • If using cookie crumbs, sprinkle them immediately before the chocolate sets.
  • Chill the cookies in the fridge for at least 30 to 45 minutes to set the topping.

Notes

Let the cookies cool completely before topping to avoid a slippery caramel layer. For serving, allow them to sit out for 10 minutes before serving for the perfect balance of chilly and soft.
