Base Ingredients

  • 4 large Large eggs Use 3 if you're not very hungry.
  • 2 pieces Flour tortillas Regular white tortillas recommended.
  • 1 cup Shredded cheese Cheddar or mozzarella work well.
  • 0.5 cup Milk or cream A splash for fluff, optional.
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Butter or spray oil To grease the baking dish.

Optional Add-Ins

  • 1 cup Diced tomatoes Optional, for added flavor.
  • 0.5 cup Green onion Optional, for extra taste.
  • 1 cup Cooked bacon or ham Optional, if you want more protein.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease your baking dish with butter or spray oil.
  • Lay a flour tortilla in the baking dish, pressing it into the corners.
  • In a bowl, crack the eggs and add milk or cream, salt, and pepper. Beat until well mixed.

Baking

  • Pour the egg mixture over the tortilla in the baking dish.
  • Sprinkle shredded cheese and any other desired toppings on top.
  • Bake in the preheated oven for 15-20 minutes or until the eggs are set and the edges are golden brown.

Notes

Let the dish cool for a minute before cutting to avoid a mess. You can make this in a muffin tin for mini servings or double up tortillas for thicker bites.
