  • 3/4 cup milk

Preparation

  • Heat your oil in a heavy pot to about 350°F (175°C). If you do not have a thermometer, test with a tiny drip of batter. It should sizzle and rise quickly.
  • In a medium mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Add the egg, milk, and vanilla. Whisk until smooth; the batter should resemble pancake batter, possibly a touch thinner.
  • Pour the batter into a zip top bag and snip a small corner off for easy piping.

Cooking

  • Pipe 4 to 6 inch lines of batter into the hot oil, cooking in small batches to avoid overcrowding.
  • Fry for about 1 to 2 minutes per side, until golden brown.
  • Remove from oil, let drain for a moment, and dust generously with powdered sugar while they are still warm.

Notes

For best results, keep the oil temperature steady and avoid overmixing the batter. Consider trying variations like adding cinnamon or substituting vanilla with almond extract for a unique flavor.
