Ingredients
  

Main Ingredients

  • 2 fillets Salmon fillets Skin on or off, both work.
  • 1 tablespoon Butter or olive oil For cooking the salmon.
  • 3 cloves Garlic Fresh is best, jarlic in a pinch.
  • 1/2 cup Sun dried tomatoes The ones in oil are easiest, just blot them a bit.
  • 1 cup Heavy cream
  • 1/2 cup Parmesan Grated melts easiest.
  • 1 teaspoon Italian seasoning Or a mix of basil and oregano.
  • to taste Salt
  • to taste Black pepper

Optional Ingredients

  • 1 cup Baby spinach To add a hearty feel.
  • 1/2 teaspoon Chili flakes For added spice.
  • 1 slice Lemon For squeezing before serving.

Instructions
 

Preparation

  • Pat the salmon dry and season it well.
  • Sear the salmon in a hot skillet with butter or olive oil until it gets a golden edge.

Cooking

  • Remove the salmon from the skillet and set it aside.
  • In the same pan, soften minced garlic.
  • Stir in chopped sun dried tomatoes.
  • Pour in heavy cream and let it bubble gently.
  • Add grated parmesan and Italian seasoning.
  • Slide the salmon back into the sauce just long enough to finish cooking.

Notes

Store in an airtight container in the fridge for up to 3 days. Reheat gently on low heat, adding a splash of cream if necessary.
