Ingredients
  

For the turkey filling

  • 1 lb ground turkey Can substitute with ground chicken or black beans.
  • 2 tbsp taco seasoning Use your favorite blend.
  • 1 cup salsa Choose your preferred type.

For serving

  • 2 large avocados Halved and pitted.
  • 1 cup shredded cheese Cheddar or Monterey Jack recommended.
  • optional chopped jalapeƱos For added heat.
  • optional chopped olives As suggested by neighbors.

Instructions
 

Preparation

  • Heat a skillet over medium heat and cook the ground turkey until browned.
  • Add the taco seasoning and salsa to the cooked turkey, stirring to combine.
  • Cook for another 5 minutes until everything is heated through.

Assembly

  • While the turkey filling is cooking, prepare the avocados by halving and pitting them.
  • Scoop out a little of the flesh to make room for the filling.
  • Fill each avocado half generously with the turkey filling.
  • Top each stuffed avocado with shredded cheese and any additional toppings.

Notes

These stuffed avocados can be made in advance with the turkey mixture frozen and fresh avocados filled when ready to eat. Experiment with toppings to suit your taste.
