Ingredients
  

Pork and Miso Ingredients
  • 4 pieces thick-cut bone-in pork chops Bone-in is recommended for best flavor.
  • 3 tablespoons white miso paste Available in the Asian food aisle.
  • 2 cups fresh mushrooms (button, cremini, or shiitake) Any of these types work well.
  • 2 tablespoons butter For sautéing.
  • 2 tablespoons olive oil For cooking the pork chops.
  • 2 cloves garlic Minced.
  • 1 medium onion Sliced.
  • 1 cup chicken broth Or vegetable broth.
  • 2 tablespoons soy sauce For flavor.
  • to taste salt and pepper
  • 1 teaspoon honey or brown sugar Optional for sweetness.
  • 2 tablespoons sake or white wine Optional for added depth.

Method
 

Preparation
  1. Pat the pork chops dry and sprinkle with salt and pepper on both sides.
  2. Heat the olive oil in a sturdy pan until it sizzles.
  3. Sear the pork chops for about 3-4 minutes on each side until browned.
  4. Remove the pork chops from the pan and set aside.
Cooking the Mushrooms
  1. Add butter to the same pan and sauté the sliced onions and mushrooms with a pinch of salt until they are soft and golden.
  2. Add minced garlic and cook for another minute until fragrant.
Simmering
  1. Lower the heat, mix in the miso paste, chicken broth, soy sauce, and optional sake or wine, stirring until smooth.
  2. Return the pork chops to the pan and let them simmer for 6-8 minutes, with the lid half on, until cooked through.
  3. Remove from heat and let the pork rest for 1-2 minutes before serving.

Notes

Serve with steamed jasmine rice and roasted green beans or broccoli for a complete meal. Ensure the pork chops are not overcooked for best flavor.
