  • 6 pounds apples, peeled, cored, and sliced Use a mix of sweet and tart apples for best results.
  • 1 cup brown sugar Adjust to taste, start with 3/4 cup.
  • 1 teaspoon cinnamon Or adjust from 1 to 2 teaspoons based on your preference.
  • 1/4 teaspoon ground cloves Optional but adds warmth.
  • 1/4 teaspoon nutmeg Optional.
  • 1 teaspoon vanilla extract Add near the end for flavor.
  • 1 pinch salt Enhances overall flavor.
  • 1 splash apple cider or water Use if apples seem very dry.

Preparation

  • Add the sliced apples to your slow cooker. It may look like too much, but they will collapse as they cook.
  • Sprinkle in the brown sugar, cinnamon, cloves, nutmeg, and salt. Stir quickly and then put the lid on.

Cooking

  • Cook on LOW for about 8 to 10 hours, stirring occasionally.
  • Once apples are very soft and brown, blend until smooth using an immersion blender or a regular blender in batches.
  • Remove the lid and continue cooking on LOW for 1 to 2 more hours to thicken, stirring occasionally.
  • Stir in vanilla extract near the end, and taste to adjust sugar or spices if desired.

Notes

Allow the apple butter to cool a bit before packing into jars. Store in the fridge for 2-3 weeks or freeze for up to 3 months. The flavor improves after a day in the fridge.
