Instructions

Preparation

  • In a bowl, mix softened cream cheese with 1-2 tablespoons of sugar and a little vanilla. Fold in the diced strawberries.
  • Lay out 4 slices of bread. Spread the filling evenly across them, leaving a small border around the edges. Top with the other slices and press lightly to hold together.
  • In a shallow bowl, whisk the eggs, milk, cinnamon, salt, and additional vanilla if desired.

Cooking

  • Heat a skillet over medium to medium low heat and add butter.
  • Dip each sandwich quickly into the egg mixture, flipping once, and let the excess drip off.
  • Place the sandwich in the skillet and cook for 3 to 4 minutes per side, or until golden brown.
  • If the bread is thick, you may need an extra minute per side. Cover the pan for a minute to help the center warm through.

Serving

  • Serve immediately with a dusting of powdered sugar, extra strawberries, and maple syrup if desired.

Notes

You can mix the filling and assemble the sandwiches ahead of time and refrigerate overnight for quicker cooking in the morning. Avoid overfilling and cook at medium low to ensure the center is fully heated.
